As NACUFS leads and supports college and university foodservice operations across the United States, they are partnering with Changing Tastes to develop a new sustainability platform and management system.
Together, we are developing a new platform centered on the ten issues most central to sustainability in institutional food service. These include new culinary approaches that balance local and global ecological concerns and the pursuit of social equity in the food sector.
The new system will include executive assessments connecting foodservice to academic priorities, best practices in culinary, sourcing and operations, and a sustainability benchmarking tool designed to help more than 700 colleges and universities as well as contract management firms like Aramark, Compass Group, and Sodexo. This collaborative effort serves to continuously improve their contributions to protecting ecological systems, regenerating farm and ranch lands, and achieving social equity in the food sector.
